The numbers, worked
- Loaves: 24 × 900 g + 2% = 22,032 g of country dough, 3 loads of 8 at 45 minutes.
- Rolls: written as "dozen" pieces of 720 g (12 rolls of 60 g), 10 dozen + 2% = 7,344 g of roll dough, 2 dozen to a load, 5 loads of 20 minutes.
- Oven: 3 × 45 + 5 × 20 = 235 minutes, so the first load goes in at 6:05 am.
- Levain: 2,237 g for the loaves and 742 g for the rolls, plus 50 g kept back = 3,029 g.
- Feed at 1:5:5: 275 g of starter, 1,377 g each of flour and water.
The plan uses only the numbers you give it. It does no fermentation timing and gives no food-safety advice.
Questions
Can it plan several days before the holiday?
This free planner does one bake day at a time. Plan each day on its own sheet. A multi-day holiday plan that carries levain feeds across days is planned for a paid edition, not on sale yet.
How do I enter rolls?
As a product counted by the dozen, with the dough for a dozen as its weight, or one roll at a time with many to a load. Either gives the same dough.
Do enriched doughs work?
Yes. Butter, milk, sugar and eggs are lines in the formula like any other, as a share of the flour.
What if the oven can't finish in time?
The start time moves earlier. If it is too early, bake the rolls the afternoon before, as a separate day.
Change the example
Formulas are in baker's percentages: the flours add to 100% and every other line is a share of the flour. Changes on this page are kept in this browser, apart from your plan on the full planner.
