Farmers market bake planner

Thirty-two loaves for an 8 am market, four to a load in a home oven, is 8 loads and 6.5 hours of baking. To be out by 7:00 am, the first load goes in at 12:30 am and the oven heats at 11:45 pm the night before. That is the number to see before you take more orders.

The numbers, worked

  1. Country: 24 loaves ÷ 4 = 6 loads of 45 minutes. Rye: 8 ÷ 4 = 2 loads of 60 minutes.
  2. Oven: 6 × 45 + 2 × 60 = 390 minutes.
  3. Dough: 22,032 g of country and 8,160 g of rye, 30.2 kg in all.
  4. Levain: 3,292 g for both doughs, build 3,342 g the evening before.
  5. To bake later: more loaves to a load, a second oven, or fewer products. Change a number and the start time moves.

The plan uses only the numbers you give it. It does no fermentation timing and gives no food-safety advice.

Questions

How many loaves should I bake for a market?

The planner doesn't forecast sales. Type what you plan to bring, and it shows whether your oven can make it.

Can I split the bake over two days?

Plan each bake day on its own. The free planner does one day at a time.

Does it print a sheet for the bench?

Yes: the orders, the levain build, each mix with check boxes, and the loads with in and out times.

Is my plan saved?

Formulas are in baker's percentages: the flours add to 100% and every other line is a share of the flour. Changes on this page are kept in this browser, apart from your plan on the full planner.
