Bake Replan / Home oven bake schedule
Home oven bake schedule: 12 loaves by noon
A home oven with two Dutch ovens bakes 2 loaves a load. Twelve 900 g loaves take 6 loads of 45 minutes, or 4.5 hours. For pickup at noon, the first load goes in at 7:30 am and the oven heats at 6:45 am.

The numbers, worked
- Loads: 12 loaves ÷ 2 per load = 6 loads.
- Oven time: 6 × 45 = 270 minutes.
- First load: 12:00 pm less 4½ hours is 7:30 am; with a 45-minute preheat, heat at 6:45 am.
- Dough: 12 × 900 g + 2% = 11,016 g, so 4,753 g of bread flour and 4,194 g of water.
- Levain: 1,118 g in the dough, build 1,168 g tonight.
The plan uses only the numbers you give it. It does no fermentation timing and gives no food-safety advice.
Questions
How do I fit more loaves into a day?
More per load (a baking steel holding four batards), shorter bakes, or a second oven. Change "Pieces per oven load" and watch the start time move.
Should the dough be shaped all at once?
The planner doesn't time proofing. With six loads over four and a half hours, many bakers shape and retard in the fridge and pull each pair in turn; set your own times on the day sheet.
Does the time between loads count?
Add it to the bake time. If reheating the Dutch ovens takes 5 minutes, type 50 instead of 45.
Is this only for sourdough?
No. Any dough works; without a levain line there is simply no levain to build.

Formulas are in baker's percentages: the flours add to 100% and every other line is a share of the flour. Changes on this page are kept in this browser, apart from your plan on the full planner.
